Broken imagination == beef stew
Being sick can definitely break ones imagination, that is why I made beef stew. Well, kind of. I just felt like beef stew and I wanted to make something easy. It won't be ready until tomorrow, so I can't say whether or not it is any good. Like most things I cook, it is a bit different each time, but here is how I made it tonight.
- 1 1/2 lb. Stewing beef. Stew meat happens to be cheap and happens to be the easiest thing to cook with a crock pot.
- 4 carrots. Peel and chop into bite sized pieces.
- 4 red-skinned potatoes. Leave the skin on, but wash and cut them into bite sized pieces.
- 1 small onion. Chopped.
- Green beans. Leave the green beans in slightly large bite sized pieces. Don't forget to cut off any stems.
- 2 Tbsp. crushed tomatoes. Too many tomatoes can make the stew more veggie flavored than beefy. The amount can be adjusted to taste.
- 2 cloves garlic. Chopped.
- 1-2 cups beef or chicken broth. I use broth from the brand Pacific it is the only kind I have found that actually tastes good, but I could just be weird.
- 1/2 a beer. Like any time you cook with alcohol, you should only cook with something you would be willing to drink. I used Drop Top Amber tonight.
- Spices. Salt (sea salt is what I use), Oregano, Basil, Savory. I think that is all that I used. Some people like to put bay leaf — I am indifferent.
Brown the meat in a small amount of hot oil (I used olive oil). Place all veggies in the crock pot; then add the browned beef on top. Season, then cover with the liquids (broth and beer). Cook on low in the crock pot for around 8 hours.
