Couscous
Sure there plenty of delicious meals that take hours to make. Many nights there just isn't that much time to dedicate to dinner. Obvious options are not always that good for you. Couscous however is amazingly simple and quick to make. By itself it can be a bit boring, so I add random things. Here are some of the things that I add
- Carrots
- Tomatoes (canned or fresh)
- Celery
- Red pepper
- Onion
- Zucchini
- Mushrooms
- Walnuts or pine nuts
- Garlic
- Herbs (cilantro, basil...)
- Chicken (already cooked)
It is very easy. Chop up whatever ingredients and cook them for a few minutes in a pot with olive oil. Once they are about halfway cooked add a cup of water. Bring to a boil and stir in a cup of couscous. Let it sit for 5 minutes and dinner is ready.
Oh, there is no picture because we were hungry. Since I make couscous and veggies almost once a week lately, maybe there will be a real photo later.
