Green Chili
I bet you think I am going to talk about how nice it was to go back to New Mexico and have great green chili. Well, you would be wrong. Before I continue, I do think that New Mexico has the best chili.
That said ... I ate green chili for pretty much every meal, and it all sucked. What a disappointment. I tried the normal chili and the chopped at el camino. Both times I had to order extra. It still lacked flavor and heat. Jimmy's in Albuquerque was much better food, but the chili wasn't amazing by any means.
Not to worry, there is a good ending yet. Months back Bill++ drove out here to visit me. They came baring gifts of frozen chili. Mmm, so tasty (thank's again guys). After returning from the trip Sunday I used the last of it.
Green chili chicken enchiladas. Yummy. There are a few things that I think I make better than most restaurants. Enchiladas fit into this group. They are so easy to make though, I don't know how they get messed up. Here is what I put into mine in case you want to make some.
- 1lb hot green chili
- 1 jalapeno
- 3 cloves garlic
- 1 small white onion
- 1 can mushroom soup (this I plan on finding a replacement for)
- 1/2-1lb chicken
- 8oz cheese
- corn tortillas
Cook then chop the chicken. Mix slightly sautéed diced jalapeno, onion and garlic in with the chicken and mushroom soup. Heat the corn tortillas in olive oil. Then make layers of tortilla, mix, then cheese. I usually do 3 layers. Heat at 320-350 until melty and warm.

I added that just for you. If we can ever get some real green chili out here, I'd gladly make some enchiladas with you.

You know, you were just in New Mexico, where they sell the same chile you just ran out of. Tsk.

I had wanted to buy some, but we were so busy. I should have planned ahead on how to bring it back.

Silken tofu, blenderized and some fresh chopped mushrooms would probably work pretty well. Silken tofu works as a substitute for heavy cream pretty well and should work here too.
