Burgers and fries
Doesn't sound like the most healthy meal now does it? Amazingly it can be fairly good for you (comparatively). It can also taste very different than, let's say, McD's.
Here is my version of each:
- Fries: Equal parts sweet potato and red-skinned potatoes. Julienne (cut into thin slices) them. Drizzle olive oil on a pan. Add just the sweet potatoes. Season them with cayenne, paprika, green chili powder, and sea salt. Cook at 400 degrees until beginning to tender. Add the red-skinned potatoes. Cook a few more minutes and then adjust the oven to broil until crispy.
- Burgers: Use organic hormone-free beef. Dice a small amount of garlic, red onion, and red pepper. Mix with basil, oregano and meat. Place a small chunk of cheese in the center of the burger.
The cheese serves two purposes. It is a tasty surprise and allows the inside of the burger to be cooked through without risking over cooking the outer portion.
Cook the burger in chicken broth on med-high. I think using broth instead of oil makes the meat juicy and tender without adding a greasy flavor.
If you want cheese on top add it at the very end. Tonight's burgers were also topped with mushrooms, red peppers, red onions, a slice of bacon and jalapenos.
Instead of buns we had sprouted grain bread. This is because, well, I don't eat wheat flour. In my opinion it is much tastier anyways.
So there is my take on burgers and fires. I think Dan actually took a picture (his burger was a bit massive). That might get added later.
It is clearly not diet food, but it is free of all the weird crap places put in food now-a-days. One of my favorite reasons I enjoy cooking so much is the knowledge of what exactly I feed us.
